If you have ever eaten a Wolfgang Puck pizza or been to California Pizza Kitchen or Sammy's, you'll recognize one of Caioti Pizza Café's specialties. It's the BBQ Chicken Pizza. Puck may get credit for the creation, but it was actually the brainchild of Ed La Dou, who was the driving impetus behind the gourmet pizza movement that swept the West Coast in the 1980's. Southwest Airlines Spirit Magazine (February 2006) "The Country's 10 can't miss Pizzerias" By Jeremy White --------- "The phrase California Pizza has become part of our everyday language. BBQ Chicken as a topping now somehow makes sense. And it was Ed LaDou, aka "the prince of pizza" who started it all." Food Arts Magazine 2003 ------------- Americans eat approximately 350 slices per second--about 100 acres a day. At last count, there were close to 70,000 pizzerias in the U.S., working tirelessly to satisfy that $11-billion a year craving with a seemingly endless variety. Pizza's American journey has come full circle--from small Italian-American communities, through the cutthroat competition of global chains, to the mass-produced world of frozen pizza, and back to distinctive, personal pies. But all the while, pizza has managed to retain its original identity--its versatility and strong heritage have given it a staying power like no other. Despite fierce passions and regional preferences, there's room for everybody at the pizza table. --------- Ed La Dou is the "Rembrandt of Pizza" American Eats The History Channel http://store.aetv.com/html/product/index.jhtml?id=76216#details ------------- "For some of the best pizza in L.A., not to mention terrific pastas and grilled dishes, Ed LaDou's Caioti is the place to go." Bon Appetite magazine ---------- "The Perfect Pizza" Bon Appetite Magazine ------------ "Still one of the top pizza places in Southern California." Sunset Magazine
